Let’s Go to Coppelia

A KIDS PRICELESS SATISFACTION

Visited by nearly 13,000 people a day —a figure that increases in summer and during school vacations— Coppelia is the preferred place of Cuban families not only because of an opportunity to go out but because in its four decades it holds the memories of good times in the lives of several generations.

So, will we stand by watching its image deteriorate?

On April 18, Granma published a letter to the editor, in which the author denounces the theft of buckets of ice cream and other irregularities observed while waiting in line for nearly two hours. A second complaint received by the newspaper stated: "Such things are inconceivable."

A SMILE ON THE WORKERS FACES IS ESSENTIAL.

SO, WHAT DOES MANAGEMENT SAY

When a worker or member of the security company accepts a bribe, as has happened, it discredits us, says Silvio Mesa, manager of Coppelia since December 2007.

We had to fire several guards and workers for their involvement in these serious infractions. It’s a daily battle, because we serve the population in a facility open from several accesses, and where after 2:00 p.m. it is hard to control the people that come in from different points and have a code of signals to alert each other when a police operation takes place.

A bucket of ice cream (2.62 gallons) should provide 50 scoops for which the State obtains a total of 50 pesos (US $2.50), while the "black market" pays twice that or more. It’s a subsidized production, due to the cost of the raw materials, and nothing justifies that our personnel —a stable work force with a good salary, bonuses and tips to divide amongst all the workers—, be accomplices of the theft, concluded Mesa.

EACH CUSTOMER SHOULD RECEIVE THE CORRECT AMOUNT.

Each sales point has its section chief, who should attend anyone who doesn’t feel satisfied with the service received (a table should rotate in 45 minutes), or unhappy with the quality and quantity of the product. Technically, the customer can complain to the shift boss, the cashier or the director of the center. Soon a consumer protection desk with a complaint and suggestion book will also be set up.

Maritza Seijas, a section chief, said what’s most important "is to recover the smile on the face of each of the workers, and to serve with efficiency."

Although presently —visitors to Coppelia of different ages— say the Varadero ice cream being offered is of acceptable quality, and in the future it will be substituted by the superior Coppelia Premium ice cream.

THE COPPELIA FACTORY IS ABOUT TO CONCLUDE MAJOR REPARATIONS.

According to Pablo Abreu, director of the Coppelia Dairy Products Co., the firm is planning to obtain 30 large horizontal refrigeration units, which will allow for the increase from 6 to 8 flavors, introduce a centralized water cooling system and invest in dishes, cups and stainless steel spoons (made in Cuba) to eliminate the plastics currently used.

The storage capacity in the freezers will increase to 5,000 buckets. Each day between 1,200 and 1,300 are used and Abreu said there is no reason to not comply with the open hours of 9:45 a.m. to 9:15 p.m., when the last group of customers enters.

The facility has also been painted, lighting restored and the surrounding grounds replanted. Lacking tables and chairs are being replaced, steps being taken with the profits from the kiosks that sell ice cream to tourists in hard currency, said Abreu.

MAJOR REPAIRS

The Coppelia ice cream factory (Capdevila) shut down in July 2006 for major reparations. With the repairs still in progress, production capability is 4,000 gallons a day that could reach 10,000.

During a visit to the industry, Juan Pedro Suarez, its director, spoke of the refrigeration repairs, the machine area, the lines of ammoniac, water and steam, and noted they are waiting for three Chinese freezers that will guarantee a better flavor, texture and product yield. Several of the pieces of new equipment are self-programmed and reduce energy consumption.

Besides, at L and 23rd, the ice cream is distributed at other establishments like the Himalaya (Playa municipality), Word (Cerro), Arlequin (Centro Habana), the 26th St. Zoo, Las Yagrumas (10 de Octubre) and Calzada and 12th.

La céntrica esquina de L y 23 ganó más popularidad desde la inauguración de la heladería Coppelia, el 4 de junio de 1966.

Esa satisfacción infantil no tiene precio.

Frecuentada por cerca de 13 000 personas cada día —cifra que aumenta en el verano y durante los recesos docentes— es lugar preferido de la familia cubana no solo por ofrecer una oportunidad para refrescar, sino porque en sus cuatro décadas de existencia ha sido confidente de muchos buenos momentos en las vidas de varias generaciones.

Entonces, ¿contemplaremos apacibles el deterioro de su imagen?

El pasado 18 de abril Granma publicó una misiva, en su página de Cartas a la dirección, en la que su remitente denunciaba el desvío de tinas de helados en Coppelia, y otras irregularidades observadas mientras hacía una cola de casi dos horas. Una segunda queja recibida en nuestro diario, sentenciaba: "Estos hechos son insólitos e inconcebibles."

Rescatar la sonrisa de los dependientes, un asunto esencial.

¿QUÉ OPINAN EN L Y 23?

Cuando alguien del colectivo, o del cuerpo de seguridad integral cede ante los sobornadores, como ha sucedido, nos desacredita, afirma Silvio Mesa, director de la heladería desde diciembre del 2007.

Hemos separado del centro a varios custodios y a trabajadores por incurrir en esas indisciplinas graves. La batalla es diaria, porque servimos a la población en un establecimiento abierto, con varios accesos, donde después de las 2:00 p.m. se hace complejo controlar a los "merolicos" que entran por distintos puntos y poseen su código de señales para avisarse si la PNR efectúa un operativo.

Una tina de helado (capacidad 2,62 galones), debe dar 50 bolas, y por ellas el Estado solo recauda 50 pesos, mientras en la "bolsa negra" la pagan a 100-120 pesos. Es una producción subsidiada, debido al costo de sus materias primas, y nada justifica que nuestro personal, una fuerza estable, con un buen salario, estimulación y propina para repartir entre todos, sea cómplice de esos desvíos, concluyó Mesa.

Que cada consumidor reciba la cantidad correspondiente.

Cada punto de venta hoy tiene su jefe, al cual debe acudir quien no se sienta a gusto con el trato recibido (una mesa ha de rotar en 45 minutos), o si no le satisface la calidad y cantidad del producto. Si fuera preciso, puede reclamar ante el responsable del turno, la comercial, o el director del centro, con independencia de que en breve entren en vigor una zona para la protección al consumidor y libros de quejas y sugerencias.

Lo esencial para Maritza Seijas, jefa de área, "es rescatar la sonrisa en cada uno de los dependientes, servir con eficiencia para salir adelante."

Aunque en la actualidad —acorde con criterios expresados in situ por personas de distintas edades— el helado Varadero ofertado en L y 23 tiene una calidad aceptable, está en proyecto sustituirlo por uno superior, el Coppelia Premium.

La fábrica Coppelia está al concluir su reparación capital.

Según Pablo Abréu, director de la Empresa de Productos Lácteos Coppelia, adquirirán 30 gabinetes refrigerados horizontales, ello incrementará de 6 a 8 los sabores que despacharán; introducirán un sistema centralizado para enfriar el agua, e invirtieron en pozuelos, copas y cucharas de acero inoxidable (hechos en Cuba) para eliminar los recipientes plásticos.

La capacidad de almacenaje en las neveras aumentó hasta 5 000 tinas, y si cada día emplean de 1 200 a 1 300, no existen razones para incumplir el horario laboral, de 9:45 a.m. a 9:15 p.m., cuando ha de entrar la última rotación de público.

También pintaron el sitio, restituyeron su iluminación, resembraron sus jardines, y están completando el mobiliario, pasos dados a partir de la inversión de los CUC que recaudan los quioscos ubicados en la propia instalación, argumentó Abréu.

UNA REPARACIÓN CAPITAL

La fábrica de helados Coppelia (Capdevila) fue detenida en julio del 2006 para su reparación capital. Sin concluir las obras, hoy alcanza como promedio 4 000 galones diarios, y podrá llegar a 10 000.

De lo humano y lo divino se conversa mientras esperas por un helado.

Durante un recorrido por esa industria, su director, Juan Pedro Suárez, habló sobre las restauraciones de la refrigeración, la sala de máquinas, las líneas de amoníaco, agua y vapor, en tanto esperan por tres congeladoras chinas que garantizarán mejor sabor, textura y rendimiento del producto. Varios de los nuevos equipos se autoprograman y reducen el consumo energético.

Además de a L y 23, distribuyen el gustado alimento a otros establecimientos de la gastronomía citadina, como son El Himalaya (municipio de Playa), Word (Cerro), Arlequín (Centro Habana), Zoológico de 26, Las Yagrumas (10 de Octubre) y Calzada y 12.

El tiempo invertido en hacer la cola de Coppelia siempre variará en dependencia del día de la semana, la hora y la época del año, pero esa espera no ha de emplearse en lanzar al césped envases de refrescos vacíos o cualquier desperdicio, rallar las paredes, maltratar los teléfonos públicos e incurrir en otras indisciplinas sociales contrarias al espíritu de preservar lo que todos disfrutamos.

Como se aprecia en la información ofrecida, hay voluntad de mejorar el servicio. Ahora, si cuidamos la instalación y su entorno, nos sentiremos más felices.
